Creamy lemon spread

Ingrediënten
- 3 el olijfolie
- 1 ui, fijngehakt
- 2 teentjes knoflook, fijngehakt of geperst
- 5 el tomatenpuree (ca. 75 g)
- 1 citroen
- 2 tl honing (meer naar smaak)
- 250 ml kookroom (light of gewoon)
- 4 el The Spice Club Pasta Perfection mix
- 450 g spaghetti of andere lange pasta
- Geraspte Parmezaanse kaas (optioneel), om te garneren
Bereiding
Step 1 - Cooking pasta: Cook the spaghetti in water according to the instructions on the package. Store 100 ml of cooking liquid, drain the rest.
Step 2 - Make sauce: Heat the olive oil in a large frying pan over medium heat. Fry the onion for 3–4 minutes until glassy. Add garlic and fry for 1 minute. Add the tomato puree and bake for 2–3 minutes, until it turns somewhat darker.
Step 3 - creamy lemon sauce: Add 2 tbsp lemon juice (for extra lemon flavor you can add some lemon rasp), honey and The Spice Club Pasta Perfection. Pour in the cream, stir well and simmer for 3–5 minutes. Taste and add some extra honey or lemon for balance.
Step 4 - Mix pasta: Add the boiled pasta to the sauce. Mix well. Add a bit of the cooking liquid to loosen the sauce.
Step 5 - Serve: Divide over deep plates. Finish with Parmesan cheese to taste.
