Quick Cous Cous


Discover this simple recipe for couscous with Moroccan flavors, perfect for a weeknight meal and packed with vegetables.


4 persons

  • Olive oil
  • 1 red onion, finely chopped
  • 1 yellow pepper, diced
  • Carrot, thinly sliced
  • 2 cloves garlic, minced
  • The Spice Club Maroc spice mix
  • 200 g frozen peas
  • 400 g cooked chickpeas (can)
  • 200 ml stock
  • 200 g couscous
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • THE SPICE CLUB TOPPING (optional for garnish)


STEP 1: Sauté vegetables

  • Heat a dash of olive oil in a large pan over medium heat.
  • Add the chopped red onion, yellow pepper and thin slices of carrot to the pan. Sauté the vegetables for about 5 minutes, until they begin to soften.

STEP 2: Add spices

  • Add the finely chopped garlic and The Spice Club Maroc spice mix to the pan.
  • Stir everything well and let it cook for a minute so that the herbs can release their aroma.

STEP 3: Vegetables and Broth

  • Add the frozen peas, cooked chickpeas and 200ml stock to the pan. Bring to the boil, reduce heat and simmer for 10 minutes.

STEP 4: Cooking Couscous

  • Cook the Cous Cous according to the instructions on the package
  • Add the Cous Cous to the pan and cover with a lid and remove the pan from the heat. Let the couscous stand for 5 minutes

STEP 5: Finish the couscous

  • Fluff the couscous with a fork.
  • Add the chopped parsley and mix everything well.
  • Season with salt and pepper.

Serve the couscous warm, straight from the pan. Garnish with THE SPICE CLUB TOPPING for a tasty finishing touch.
