Egg salad on toast with Everything Bagel Topping

Ingrediënten

  • 8 eieren (maat L)
  • IJswater, om af te koelen
  • 100 g mayonaise light
  • 2 bosuitjes, in dunne ringetjes gesneden (+ extra om te garneren)
  • 1 middelgrote augurk, fijngehakt (optioneel)
  • 2 tl Dijonmosterd
  • 4 el The Spice Club Everything Bagel Topping
  • Geroosterd zuurdesembrood of stevig brood, om te serveren

Bereiding

Step 1 - Cook eggs: Bring a pan of water to the boil. Carefully add the eggs and cook for 9–10 minutes. Then scoop them in a bowl with ice water to cool. Peel the eggs once they have cooled.

Step 2 - Make egg salad: Coarsely chop the eggs and put in a mixing bowl. Add mayonnaise light, mustard, spring onion, pickle and 3 tablespoons everything bagel topping. Mix gently into a creamy salad. Season with pepper or a pinch of salt (if desired) if desired.

Step 3 - Serve: Cover the roasted sandwiches generously with the egg salad. Garnish with extra spring onion and a pinch of the remaining everything bagel topping for extra crunch.
