Green lentil salad

Ingrediënten
- 300 g groene linzen
- 4 tl The Spice Club Maroc kruidenmix
- ½ tl versgemalen zwarte peper
- 120 ml extra vierge olijfolie
- 2 el ongefilterde appelciderazijn
- 1 tl kristalsuiker
- 1½ kopje fijngesneden komkommer
- 170 g druiventomaten, gehalveerd of in vieren
- ⅓ kopje fijngesneden rode ui
- 1 teentje knoflook, fijngehakt
- ⅓ kopje fijngehakte verse platte peterselie (optioneel)
- 2 el vers geperst citroensap (van 1 citroen)
- 170 g verkruimelde feta (optioneel)
Bereiding
Cook the lentils
Rinse the lentils and cook them in plenty of water for about 20-25 minutes until they are sturdy. Drain and let cool.
Make the dressing
In a small bowl, mix the olive oil, apple cider vinegar, sugar, lemon juice, The Spice Club Maroc herb mix, and black pepper. Stir well.
Prepare the vegetables
Finely chop the cucumber, tomatoes, and red onion. Chop the garlic and possibly the parsley.
Mix the salad
Mix the cooled lentils with the cucumber, tomatoes, red onion, garlic, and possibly the parsley. Add the dressing and mix everything well.
Serve
Sprinkle the salad with crumbled feta (optional) and serve.
