Pasta Broccoli Parmesan

Ingrediënten
- 2 stronken broccoli (ca. 900 g totaal), in kleine roosjes gesneden, dikke stelen verwijderd
- 2 teentjes knoflook, gepeld
- 60 g walnoten
- 100 g vers geraspte Parmezaanse kaas + extra om te serveren
- 1 citroen, uitgeperst
- 120 ml olijfolie
- 4 tl The Spice Club Pasta Perfection
- 400 g farfalle (of andere korte pasta, zoals fusilli of penne)
Bereiding
1. Pasta and broccoli cook Cook the pasta according to the instructions on the package. Bring a second large pan of water to the boil. Add the broccoli and cook for 5 minutes. Drain everything, but keep a cup of cooking liquid.
2. Make pesto While the pasta cooks: do the garlic, walnuts, parmesan, lemon juice, olive oil, 100g broccoli and the Pasta Perfection Mix In a food processor. Pulsing into a coarse, creamy pesto.
3. Mix everything Put the drained pasta and broccoli back in the pan. Add the pesto and mix well. If necessary, add a bit of the cooking liquid to make the whole creamy.
4. Serve Divide on plates and serve with extra parmesan and possibly some black pepper or chili flakes.
