Traybake with broccoli, sweet potato and feta

Ingrediënten

800 g zoete aardappel, in blokjes
300 g broccoli, in roosjes
180 g cherrytomaten, gehalveerd
4 bosuitjes, in ringetjes
50 g ongezouten amandelen
200 g feta, verkruimeld
4 el The Spice Club Traybake mix
6 el olijfolie
1 limoen (rasp en sap)

Bereiding

Step 1 - Preheat the oven: Preheat the oven to 200 ° C (top and lower heat).

Step 2 - Prepare vegetables: In a large bowl, mix the sweet potato cubes with 4 tbsp olive oil, 3 tbsp traybake mix and a pinch of lime zest. Divide over a baking sheet covered with baking paper. Roast in the oven for 20 minutes.

Step 3 - Add broccoli and almonds: Remove the baking sheet from the oven and add the broccoli florets, almonds and cherry tomatoes. Sprinkle with the remaining olive oil and 1 tbsp traybake mix. Mix lightly and roast for another 15-20 minutes until everything is golden brown and done.

Step 4 - Finish: Remove the tray from the oven. Sprinkle with spring onion, crumbled feta and some extra lime zest. Sprinkle with lime juice to taste.

Step 5 - Serve: Serve immediately, possibly with a fresh yogurt lime dressing or some Hummus on the Side.
