Chicken Coconut Curry


A delicious Thai chicken curry with creamy coconut milk, tender chicken, crispy vegetables and noodles. Flavored with The Spice Club Thai spice mix, sriracha and sweet honey. A perfect balance of flavors and textures, topped with The Spice Club Poke or Coco & Hazel for the finishing touch. A delicious meal in just a few steps!


4 persons

  • 300 grams chicken fillet, in cubes
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cm ginger, finely chopped
  • Olive oil
  • 200 ml coconut milk
  • 200 grams of vegetables of your choice (e.g. peppers, broccoli, carrots)
  • Sriracha sauce (to taste)
  • Honey (to taste)
  • Soy sauce (to taste)
  • 200 grams of noodles or noodles
  • The Spice Club Thai spice mix
  • Optional: The Spice Club Poke or The Spice Club Coco & Hazel for garnish
  • salt and pepper to taste


Step 1: Preparation

  • Cut the chicken fillet into cubes and set aside.
  • Finely chop the onion, garlic and ginger.

Step 2: Fry the Onion, Garlic and Ginger

  • Heat a dash of olive oil in a wok or large pan.
  • Fry the finely chopped onion, garlic and ginger until soft.

Step 3: Fry the Chicken

  • Add the chicken fillet cubes to the pan and fry until golden brown and done.

Step 4: Herbs and Vegetables

  • Add a generous amount of The Spice Club Thai spice mix to the pan and stir well.
  • Then add the vegetables of your choice and stir-fry for a few minutes.

Step 5: Add coconut milk

  • Pour the coconut milk into the pan and bring to the boil. Let it simmer for a few minutes.

Step 6: Prepare the Noodles or Noodles

  • In the meantime, cook the noodles or noodles according to the instructions on the package.

Step 7: Season

  • Taste the curry and add sriracha sauce, honey and/or soy sauce to taste. Make sure you taste the mixture before adding anything extra.

Step 8: Mix the Noodles/Noodles

  • Add the cooked noodles or noodles to the pan with the curry and mix everything well.

Step 9: Garnish and Serve

  • Serve the curry warm and garnish with The Spice Club Poke or The Spice Club Coco & Hazel for extra flavor and texture.
