Thai Salmon & Coconut Curry

A tasty salmon curry with The Spice Club Thai spice mix, coconut milk and chickpeas. The baked salmon and fresh coriander add a delicious twist to this exotic meal. Enjoy the creamy, spicy and crunchy texture with a hint of lime.

ingredients

  • 2 salmon fillets
  • 1 cup of rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red pepper, cut into pieces
  • 2 tablespoons of olive oil
  • 2 tablespoons The Spice Club Thai spice mix
  • 1 can chickpeas, drained
  • 400 ml coconut milk
  • Honey to taste (optional)
  • Lime juice to taste
  • Fresh coriander
  • Optional: The Spice Club Poke or The Spice Club Coco & Hazel for garnish

Step 1: Cooking Rice

  • Start by cooking the rice according to the instructions on the package. Set the cooked rice aside.

Step 2: Baking the Salmon

  • Fry the salmon fillets according to the instructions on the package until golden brown. Remove the fried salmon from the pan and set it aside.

Step 3: Onion, Garlic and Pepper

  • In the same pan add the chopped onion and garlic. Fry these for about 2 minutes until they smell delicious and become soft.
  • Then add the pieces of red pepper and fry them with the onion and garlic. Stir-fry everything well so that the pepper starts to soften and release its flavors.

Step 4: Herbs and Chickpeas

  • Sprinkle a generous amount of The Spice Club Thai spice mix over the vegetables. Then add the drained chickpeas to the pan and mix everything thoroughly. The spices will give the curry a delicious taste.

Step 5: Coconut Milk and Simmer

  • Pour the coconut milk into the pan with the vegetables and chickpeas. Let the curry simmer gently so that the flavors blend and the sauce thickens slightly.

Step 6: Salmon Back in the Pan

  • Place the previously fried salmon back in the pan with the curry. This adds delicious salmony flavors to the curry.
  • Add a little honey if desired for a subtle sweetness and drizzle some lime juice over the curry for a refreshing twist.

Step 7: Garnish and Serve

  • As a final touch, garnish the curry with fresh coriander for a fresh and aromatic dimension.
  • Serve the curry on top of the cooked rice and add extra lime wedges to taste.
  • Sprinkle some The Spice Club Poke or The Spice Club Coco & Hazel over the curry for texture and flavor.
