Scrambled eggs with turmeric & spinach

Ingrediënten

  • 2 tl olie
  • 1 teentje knoflook, fijngehakt
  • 200 g spinazieblaadjes
  • 4-8 grote eieren
  • 100 ml kokosmelk
  • 4 tl The Spice Club Kurkuma · BESTEL 🛍️
  • 4 sneetjes brood, geroosterd
  • Peper & zout naar smaak

Bereiding

Step 1 Heat the coconut oil in a non-stick pan over medium heat. Briefly fry the garlic and add the spinach. Let shrink for a few minutes and add a dash of water if they fry.

Step 2 Beat the eggs with the coconut milk and turmeric. Season with salt and pepper. Add to the pan with spinach and stir in continuously for 5-8 minutes until the handyles have the desired consistency. Serve on roasted slices of bread.
