This Tropical Gut Muffins Are the perfect healthy snack! Light, fiber -rich and filled with natural digestive boosters thanks to the Tropical Gut Support Blend. The combination of pineapple, coconut and cinnamon makes them wonderfully tropical and nutritious!

ingredients

  • 150 g speltmeel (of havermeel)
  • 1 tl bakpoeder
  • 1 tl Tropical Gut Support superfood blend
  • 1/2 tl kaneel
  • Snufje zout
  • 1 ei (of 1 chia-ei voor vegan variant)
  • 100 ml kokosmelk (of amandelmelk)
  • 50 ml honing of ahornsiroop
  • 2 el kokosolie (gesmolten)
  • 1 tl vanille-extract
  • 100 g ananas (in kleine stukjes)
  • 1 el geraspte kokos

preparation

  • Verwarm de oven voor op 180°C en bekleed een muffinvorm met papiertjes of vet deze in.
  • Meng in een kom het meel, bakpoeder, Tropical Gut Support blend, kaneel en zout.
  • Klop in een andere kom het ei los en voeg de kokosmelk, honing, kokosolie en vanille-extract toe. Roer goed door.
  • Voeg de natte ingrediënten toe aan de droge ingrediënten en meng tot een beslag.
  • Spatel voorzichtig de stukjes ananas en geraspte kokos door het beslag.
  • Verdeel het beslag over de muffinvormpjes en bak 20-25 minuten, tot een prikker er schoon uitkomt.
  • Laat even afkoelen en geniet van deze tropische, darmvriendelijke muffins!
