  • 200 grams of udon noodles
  • 2 cloves of garlic
  • A piece of ginger (about 2 cm)
  • 2 spring onions
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or sugar
  • 1 lime
  • Sriracha sauce (optional, to taste)

STEP 1: Cook the Udon Noodles

  • Cook the udon noodles according to the instructions on the package. Be careful not to overcook them so they stay firm.
  • Drain the noodles and rinse them under cold running water to remove excess starch. Set the cooked noodles aside.

STEP 2: Prepare the Flavorful Dressing

  • Finely chop the garlic and ginger. Cut the spring onions into thin rings. Place the minced garlic, ginger and spring onion in a large bowl.
  • Add 2 tablespoons sesame oil, 3 tablespoons soy sauce, 2 tablespoons honey (or sugar to taste), 2 teaspoons The Spice Club Indo spice mix, grated zest of 1 lime and the juice of 1 lime to the bowl.
  • Mix all ingredients well until you have a tasty dressing.

STEP 3: Mix the Noodles with the Dressing

  • Add a little boiling water from the udon noodles to the bowl with the dressing. This helps to blend the flavors and coat the noodles well.
  • Drain the cooked udon noodles and add them to the bowl with the dressing.
  • Mix gently but thoroughly so that the noodles are completely coated with the flavorful dressing.

STEP 4: Serve and Garnish

  • Divide the sesame udon noodles among 4 plates or bowls.
  • Garnish each serving with sliced ​​spring onion, a lime wedge and The Spice Club Poke seasoning mix or The Spice Club Coco & Hazel seasoning mix (optional) to taste.
  • If you like some spice, add sriracha sauce to taste.
  • Season the noodles with salt and pepper to your preference.
