Taste the delicious taste of this Thai curry with mango, served with noodles and crispy broccoli. The homemade curry paste with THE SPICE CLUB THAI adds a wonderfully spicy kick to this dish. Enjoy the sweet mango in combination with the creamy coconut milk and the spicy flavors of the curry. T

ingredients

4 persons

  • 1 onion
  • 2 cloves of garlic
  • 1 avocado
  • 5 cm ginger
  • 1 red pepper
  • 2 tablespoonsTHE SPICE CLUB THAIspice mix
  • Juice of 1 lemon
  • 1 chili pepper (optional, to taste)
  • (Coconut) oil
  • 400 ml coconut milk
  • 1 ripe mango
  • 200 grams of noodles of your choice
  • 200 grams of broccoli
  • Soy sauce
  • Sriracha or sambal (to taste)
  • Optional: THE SPICE CLUB POKEorTHE SPICE CLUB COCO & HAZELfor garnish
  • salt and pepper to taste

preparation

Step 1: Make the Curry Paste

  • Peel the onion, garlic and avocado, remove the peel from the ginger, remove the seeds from the pepper and add this together withTHE SPICE CLUB THAIin a blender. Add the lemon juice and, for some spice, the chili pepper.
  • Blend this into a smooth curry paste.

Step 2: Heat the Curry Paste

  • Heat (coconut) oil in a pan. Add the curry paste to the pan and heat over low to medium heat for about 2 minutes to release the flavors. The wonderful scent is already being released.

Step 3: Add Coconut Milk and Mango

  • Add the can of coconut milk and the mango and simmer over low heat for 15 minutes. Stir occasionally and do not let the curry boil. If you have a little more time, you can of course let the flavors of the curry infuse a little longer, but this is not necessary.

Step 4: Boil the Noodles and Broccoli

  • Cook the noodles according to the instructions. Optionally, you can cook the broccoli in the same pan for the last 5 minutes to save on washing up! You can of course also cook the broccoli separately in another pan for 5 minutes.

Step 5: Mix Everything and Serve

  • Drain the noodles and broccoli and mix them with the curry. Stir well and divide among bowls. Now add soy sauce and sriracha or sambal to taste for an extra flavor boost.
