  • Extra vierge olijfolie
  • 2 eetlepels ongezouten boter
  • 1 grote ui, fijngehakt
  • 6 teentjes knoflook, dun gesneden
  • 2 rode pepers, zonder zaadjes, fijngehakt
  • 2 jalapeños, zonder zaadjes, fijngehakt
  • 4 theelepels The Spice Club Chili Con Carne Mix
  • 1 krop Andijvie, gewassen en grof gehakt
  • 2 blikken van 400 g cannellini bonen, uitgelekt en afgespoeld
  • 1 liter groente- of kippenbouillon
  • Parmezaanse kaas
  • 200 g spinazie, gewassen en grof gehakt

For the garnish:

  • Zure room of griekse yoghurt
  • Verkruimelde tortillachips

preparation

Step 1: Baking onions and garlic

  • Verhit de olijfolie en boter in een grote pan op middelhoog vuur. Voeg de fijngehakte ui en knoflook toe en bak tot ze zacht zijn, ongeveer 5 minuten.

Step 2: Add peppers and spices

  • Voeg de fijngesneden pepers en jalapeños toe. Roer de The Spice Club Chili Con Carne mix erdoor en bak nog eens 2 minuten.

Step 3: Add vegetables and beans

  • Voeg de gehakte andijvie en spinazie toe en bak tot ze beginnen te slinken. Roer de uitgelekte cannellini bonen erdoor.

Step 4: Add stock

  • Voeg de bouillon toe en breng het geheel aan de kook. Laat het sudderen op laag vuur gedurende 20 minuten.

Step 5: Serve

  • Breng de chili op smaak met Parmezaanse kaas, en eventueel zout en peper. Serveer met een schep zure room of yoghurt, verkruimelde tortillachips en eventueel extra Parmezaanse kaas.
