ingredients

4 people

  • 180 ml extra vierge olijfolie
  • 4 el The Spice Club Fish kruidenmix
  • 900 g zalmfilet zonder huid
  • 1 grote komkommer, in dunne plakjes gesneden
  • 100 g verkruimelde feta (ongeveer 1 kop)
  • ¼ kopje peterselieblaadjes (optioneel)

preparation

Preheat the oven

Preheat the oven to 120 ° C. Cover a baking sheet with baking paper.

Prepare the salmon

Place the salmon fillet on the baking sheet and brush it with 120 ml olive oil. Sprinkle the 4 tbsp the spice club fish herb mix evenly over the salmon. Gently massage the herbs in the fish.

Roast

Place the salmon in the oven and roast it slowly for 45-60 minutes. The salmon must be firm and easily fall apart when it is tested with a fork.

Make cucumber salad

While the salmon roasts, mix the cucumber slices with the crumbled feta, 60 ml of olive oil, and if desired, the parsley. Season with salt and pepper to taste.

Serve

Remove the salmon from the oven and let it rest briefly. Serve the salmon with the fresh cucumber salad next to it.
