Enjoy this tasteful chicken fajitas, full of juicy pineapple, colorful peppers and herbs. Perfect for a quick and delicious meal!

ingredients

4 people

  • 200 g ananas uit blik
  • ½ tl limoenrasp
  • 50 ml vers limoensap (van 2 limoenen)
  • 3 teentjes knoflook, fijngehakt
  • 3 el appelazijn
  • 4 tl The Spice Club Fajita mix
  • ½ jalapeño, zonder zaadjes en fijngehakt
  • 2 el Worcestershiresaus
  • 2 el verse korianderblaadjes
  • 1 kleine rode ui, dun gesneden
  • 600 g kipfilets, in reepjes van 2,5 cm gesneden
  • 4 el olie
  • 1 groene paprika, dun gesneden
  • 1 rode paprika, dun gesneden
  • 1 gele paprika, dun gesneden
  • 8 kleine of 4 grote tortilla's, verwarmd

For serving (optional):

  • Limoenpartjes
  • Verse korianderblaadjes
  • Avocado, in plakjes
  • Gerapste kaas

preparation

Step 1: Make marinade

  • Meng de ananas, limoenschil, limoensap, knoflook, appelazijn, The Spice Club Fajita mix, jalapeño, Worcestershiresaus en koriander in een kom.
  • Voeg de gesneden rode ui en kipreepjes toe aan de marinade, roer goed door en laat minstens 30 minuten marineren, bij voorkeur langer voor meer smaak.

Step 2: Baking vegetables

  • Verhit 2 el olie in een grote koekenpan op middelhoog vuur.
  • Voeg de groene, rode en gele paprika toe en bak ze 5-7 minuten tot ze zacht worden.
  • Haal de paprika's uit de pan en zet apart.

Step 3: Bake chicken

  • Verhit de resterende olie in dezelfde pan op middelhoog vuur.
  • Voeg de gemarineerde kipreepjes toe en bak 6-8 minuten tot ze goudbruin en gaar zijn.
  • Voeg de gebakken paprika en rode ui toe en roer goed door.

Step 4: Filling tortillas

  • Vul de verwarmde tortilla's met de gebakken kip en paprika's.

Step 5: Serve

  • Serveer de fajitas met limoenpartjes, verse koriander, avocado en kaas naar smaak.
