These delicious chicken curry wraps are easy to make and packed with flavor. Perfect for novice cooks, they provide a flavorful meal with tender chicken marinated in The Spice Club Curry, seasoned rice and a spicy Greek yogurt sauce. It's a great choice for a quick and tasty lunch or dinner.

- 200 grams of rice
- 2 chicken fillets, sliced
- 250 ml low-fat Greek yoghurt, divided
- 2 tablespoons lemon juice
- 2 tablespoons The Spice Club Curry
- 1 onion, chopped
- 2 garlic cloves, finely chopped
- 1 teaspoon dried mint
- 4 whole wheat wraps
- salt and pepper to taste
preparation
Step 1: Preparing the Rice
- Cook the rice according to the instructions on the package.
Step 2: Marinating the Chicken
- Cut the chicken fillet into slices.
- Mix the chicken fillet, half of the low-fat Greek yogurt, the lemon juice and The Spice Club Curry in a bowl.
- Stir well to coat the chicken evenly and let it marinate for a while.
Step 3: Frying the onion and garlic
- Peel and chop the onion and garlic cloves.
- Fry the onion and garlic in a pan until translucent.
Step 4: Add Rice and Mint
- Add the cooked rice to the pan with onion and garlic.
- Stir in the dried mint and set the mixture aside.
Step 5: Baking the Marinated Chicken
- Heat a nonstick pan and fry the marinated chicken breast over medium heat until cooked through, about 10 minutes.
Step 6: Preparing Spicy Yogurt Sauce
- Combine the remaining low-fat Greek yogurt, a clove of garlic, and The Spice Club Curry in a small bowl to make a spicy yogurt sauce.
Step 7: Reheat Wraps
- Heat the whole wheat wraps according to the instructions on the packaging.
Step 8: Assembling Wraps
- Lay out a wrap and spread a quarter of the spicy yogurt sauce in the middle.
- Top with a quarter of the rice and cooked chicken.
- Fold the wrap tightly to enclose the filling.
