Meatballs:

  • 600 grams of ground turkey or chicken
  • bunch of finely chopped fresh basil leaves
  • 2 spring onions, white and green parts, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar (optional)
  • Salt and pepper to taste
  • 4 teaspoons The Spice Club Thai spice mix
  • 2 tablespoons of oil

Curry sauce:

  • 1 finely chopped onion
  • 4 cloves garlic, minced
  • 2 teaspoons The Spice Club Thai spice mix
  • 2 cans (400 ml each) full-fat coconut milk, well shaken
  • 3 tablespoons fresh lime juice (from 2 limes)
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar (optional)
  • Salt and pepper to taste
  • bunch of fresh basil leaves, plus extra for garnish
  • Cooked rice or roasted vegetables, for serving
  • The spice club Coco & Hazel (for garnish)
  • 400 grams Rice (optional for a non-keto variant)

preparation

If you are making this dish with rice, start by cooking the rice according to the instructions on the package.

Meatballs:

  1. In a large bowl, mix the ground turkey or chicken meat with the chopped basil, spring onions, garlic, fish sauce, cornstarch, sugar, pepper, salt and The Spice Club Thai spice mix. Mix well until everything is well incorporated.
  2. Using your hands, form meatballs about 1 inch in diameter.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the meatballs in batches and fry until golden brown and cooked through, about 6-8 minutes per batch. Remove them from the pan and set aside.

Red Curry Sauce:

  1. Use the same frying pan and add some extra oil if necessary. Add the chopped yellow onion and cook until soft and translucent, about 5 minutes.
  2. Add the minced garlic and The Spice Club Thai spice mix and cook for another 1-2 minutes until fragrant.
  3. Add the coconut milk, lime juice, fish sauce, sugar, salt and pepper. Bring to the boil and then let it simmer over low heat for 10 minutes.
  4. Add the meatballs to the sauce and simmer for 5 minutes to allow the flavors to blend.
  5. Add the thinly sliced ​​basil leaves and stir into the sauce.

To serve:

  1. Serve the turkey meatballs in the curry sauce over cooked rice
  2. Garnish with the spice club coco & hazel, extra basil leaves and fresh coriander leaves, if desired.
