Discover this easy recipe for roasted cauliflower with delicious Moroccan herbs and fresh garlic-lemon yogurt.

- 1 cauliflower
- 1 can of diced tomatoes (400 ml)
- The Spice Club Maroc spice mix
- Sriracha (Optional if you like pitting)
- 200 g Greek yogurt
- 2 cloves garlic, minced
- Juice of 1 lime
- 1 shallot, finely chopped
- 1 chili, finely chopped
- Fresh coriander
- 50 g pine nuts
- Tahini dressing (optional)
- THE SPICE CLUB TOPPING (optional)

preparation
STEP 1: Prepare cauliflower
- Start by preheating the oven to 170°C.
- Cut off the leaves and base of the cauliflower. Take a large pan and cook the cauliflower in boiling water for 5 minutes.
- Drain the water and let the cauliflower cool.
STEP 2: Prepare tomato-herb mix
- In the meantime, take a bowl and mix the contents of a can of diced tomatoes with a generous amount of The Spice Club Maroc spice mix. Add Sriracha if you like spice.
STEP 3: Marinate cauliflower
- Pour the prepared tomato-herb mix over the cooked cauliflower. Make sure that all florets are well covered with the tasty mix.
STEP 4: Roast cauliflower
- Place the marinated cauliflower on a baking tray or in an oven dish.
- Place the baking sheet in the preheated oven and roast the cauliflower for about 40 minutes, or until crispy and lightly browned.
STEP 5: Fresh Garlic-Lemon Yogurt
- While the cauliflower is in the oven, make the fresh garlic-lemon yogurt. Mix the Greek yogurt and the juice of 1 lime in a bowl.
STEP 6: Frying shallot, chili and pine nuts
- Heat some olive oil in a pan over medium heat.
- Add the chopped shallot, garlic, chili and fresh coriander to the pan. Fry for 2 minutes until the shallot is soft and the coriander becomes crispy.
- Then add the pine nuts and fry until golden brown.
STEP 7: Serve
- Divide the fresh garlic-lemon yoghurt on a large plate.
- Remove the roasted cauliflower from the oven and place it on the plate with dressing.
- Drizzle with tahini dressing and garnish (optional) generously with THE SPICE CLUB TOPPING for extra flavor & crunch.
- Serve immediately and cut the cauliflower like a cake.
