Roasted cauliflower with harissa

Discover this easy recipe for roasted cauliflower with delicious Moroccan herbs and fresh garlic-lemon yogurt.

ingredients

4 Persons

  • 1 cauliflower
  • 1 can of diced tomatoes (400 ml)
  • The Spice Club Maroc spice mix
  • Sriracha (Optional if you like pitting)
  • 200 g Greek yogurt
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1 shallot, finely chopped
  • 1 chili, finely chopped
  • Fresh coriander
  • 50 g pine nuts
  • Tahini dressing (optional)
  • THE SPICE CLUB TOPPING (optional)

preparation

STEP 1: Prepare cauliflower

  • Start by preheating the oven to 170°C.
  • Cut off the leaves and base of the cauliflower. Take a large pan and cook the cauliflower in boiling water for 5 minutes.
  • Drain the water and let the cauliflower cool.

STEP 2: Prepare tomato-herb mix

  • In the meantime, take a bowl and mix the contents of a can of diced tomatoes with a generous amount of The Spice Club Maroc spice mix. Add Sriracha if you like spice.

STEP 3: Marinate cauliflower

  • Pour the prepared tomato-herb mix over the cooked cauliflower. Make sure that all florets are well covered with the tasty mix.

STEP 4: Roast cauliflower

  • Place the marinated cauliflower on a baking tray or in an oven dish.
  • Place the baking sheet in the preheated oven and roast the cauliflower for about 40 minutes, or until crispy and lightly browned.

STEP 5: Fresh Garlic-Lemon Yogurt

  • While the cauliflower is in the oven, make the fresh garlic-lemon yogurt. Mix the Greek yogurt and the juice of 1 lime in a bowl.

STEP 6: Frying shallot, chili and pine nuts

  • Heat some olive oil in a pan over medium heat.
  • Add the chopped shallot, garlic, chili and fresh coriander to the pan. Fry for 2 minutes until the shallot is soft and the coriander becomes crispy.
  • Then add the pine nuts and fry until golden brown.

STEP 7: Serve

  • Divide the fresh garlic-lemon yoghurt on a large plate.
  • Remove the roasted cauliflower from the oven and place it on the plate with dressing.
  • Drizzle with tahini dressing and garnish (optional) generously with THE SPICE CLUB TOPPING for extra flavor & crunch.
  • Serve immediately and cut the cauliflower like a cake.
