A fresh, filling salad full of vegetables, herbs and a spicy green goddess dressing. Delicious lukewarm or cold!

4 people

  • 200 g groene of bruine linzen
  • 200 g orzo (rijstvormige pasta)
  • 120 ml extra vierge olijfolie
  • 60 ml vers citroensap (van 2 citroenen)
  • 1 verse jalapeño, in dunne ringetjes (voor een pittige variant) of 3 kleine zoetzure augurkjes, fijngesneden (voor een frissere variant)
  • 4 el The Spice Club Green Goddess mix
  • 500 g courgette of gele zomerpompoen (of een mix), in halve maantjes of driehoekjes van 0,5 cm
  • 80 g ongezouten pistachenoten of walnoten, grof gehakt
  • 3 bosuitjes, in dunne ringen
  • 1 hand (ca. 30 g) verse kruiden: bijv. basilicum, munt, dille of peterselie

preparation

1. Cooking Bring a large pan of water to the boil. Add 2 tbsp green goddess mix and the lentils and cook for 9 minutes. Then add the Orzo and cook together for another 10–12 minutes until both al dente. Drain well.

2. Make dressing Meanwhile, mix the olive oil, lemon juice, jalapenos and 2el Green Goddess mix in a large bowl. Add the zucchini and mix well. Let marinate.

3. Compile salad Add the drained lentils and orzo to the bowl. Mix with the nuts and spring onion. Season extra if necessary.

4. Add herbs Stir in the fresh herbs just before serving. Serve lukewarm or at room temperature.

Save tip: This salad stays in the fridge for up to 4 days. Let it come to room temperature before eating and season again.

If you want to add salt to your dishes, you can, of course. With our mixes, you can control your salt intake, depending on your taste and health preferences.
