This fresh lentil salad with cucumber, tomato and a spicy dressing based on The Spice Club Maroc herbs is delicious as a healthy lunch, dinner or side dish.

  • 300 g groene linzen
  • 4 tl The Spice Club Maroc kruidenmix
  • ½ tl versgemalen zwarte peper
  • 120 ml extra vierge olijfolie
  • 2 el ongefilterde appelciderazijn
  • 1 tl kristalsuiker
  • 1½ kopje fijngesneden komkommer
  • 170 g druiventomaten, gehalveerd of in vieren
  • ⅓ kopje fijngesneden rode ui
  • 1 teentje knoflook, fijngehakt
  • ⅓ kopje fijngehakte verse platte peterselie (optioneel)
  • 2 el vers geperst citroensap (van 1 citroen)
  • 170 g verkruimelde feta (optioneel)

preparation

Cook the lentils

Rinse the lentils and cook them in plenty of water for about 20-25 minutes until they are sturdy. Drain and let cool.

Make the dressing

In a small bowl, mix the olive oil, apple cider vinegar, sugar, lemon juice, The Spice Club Maroc herb mix, and black pepper. Stir well.

Prepare the vegetables

Finely chop the cucumber, tomatoes, and red onion. Chop the garlic and possibly the parsley.

Mix the salad

Mix the cooled lentils with the cucumber, tomatoes, red onion, garlic, and possibly the parsley. Add the dressing and mix everything well.

Serve

Sprinkle the salad with crumbled feta (optional) and serve.

Information about salt

At The Spice Club, we don't add salt to our products because we want to offer 100% pure ingredients, free from cheap fillers like salt and sugar.

If you want to add salt to your dishes, you can, of course. With our mixes, you can control your salt intake, depending on your taste and health preferences.
