This delicious Tikka Masala with roasted cauliflower is a tasty dish with a rich mix of herbs and flavors. It is suitable for both novice cooks and experienced cooks and is packed with delicious ingredients such as cauliflower, cod fillets and chickpeas. The creamy sauce based on THE SPICE CLUB CURRY, ginger and coconut milk makes this dish irresistible.

  • 1 cauliflower, cut into small florets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, finely chopped
  • 2 tablespoons THE SPICE CLUB CURRY
  • 2 tablespoons tomato paste
  • 1 tablespoon honey (optional)
  • 400 ml light coconut milk
  • 400 g chickpeas, drained
  • 4 cod fillets
  • Handful of fresh spinach
  • THE SPICE CLUB TOPPING or THE SPICE CLUB POKE (optional, for garnish)
  • salt and pepper to taste


Step 1: Preheat the Oven

  • Preheat the oven to 180°C.

Step 2: Prepare the Cauliflower

  • Cut the cauliflower into small florets and chop the onion and garlic finely.
  • Divide them over an oven dish, sprinkle with a little olive oil and bake them in the preheated oven for 15-20 minutes until they are done and lightly browned.

Step 3: Make the Creamy Sauce

  • Add the chopped ginger, THE SPICE CLUB CURRY, tomato paste, and light coconut milk to a blender or food processor. Mix into a smooth paste.

Step 4: Combine the Ingredients

  • Pour the creamy sauce over the roasted cauliflower and onion in the baking dish. Also add the drained chickpeas and stir everything well.

Step 5: Add the Cod Fillets and Spinach

  • Place the cod fillets on top of the sauce in the oven dish and add the fresh spinach.

Step 6: Bake in the Oven

  • Cover the baking dish with aluminum foil and bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and the sauce has thickened beautifully.

Step 7: Serve and Garnish

  • Remove the baking dish from the oven and serve the Tikka Masala with the roasted cauliflower.
  • Garnish with THE SPICE CLUB TOPPING or THE SPICE CLUB POKE for extra flavor and texture.
