4 people

  • 15 ml olijfolie
  • 300 g bruine rijst
  • 400 g tomaten in blik
  • 475 ml kippen- of groentebouillon
  • 4 el The Spice Club Mexicaanse kruiden
  • 400 g zwarte bonen, afgespoeld en uitgelekt

Options garnish;

  • Jalapenos
  • Koriander
  • Creme Fraiche
  • The Spice Club Topping

preparation

  1. Verhit de olijfolie in een pan op middelhoog vuur. Voeg de ongekookte rijst toe en bak deze kort.
  2. Voeg de tomatensaus, bouillon en Mexicaanse kruiden toe. Roer goed door elkaar.
  3. Breng het mengsel aan de kook en zet dan het vuur laag. Laat sudderen tot de rijst gaar is en al het vocht is opgenomen, dit duurt ongeveer 20-25 minuten.
  4. Voeg de zwarte bonen toe en warm ze nog even door. Serveer de Mexicaanse rijst warm als bijgerecht of als onderdeel van een hoofdgerecht.
