These Loaded Sweet Potato Fries with Chorizo and Chicken are a tasty treat for weekdays. Crispy sweet potato fries are topped with savory chorizo, tender chicken and a creamy sauce. Perfect to enjoy when you have little time, but still want to put something healthy and delicious on the table.

2 large sweet potatoes
Olive oil
100g chorizo
2 chicken fillets
200 g black beans
1 red pepper
150 g Greek yogurt
Sriracha sauce
2 teaspoons THE SPICE CLUB Potato spice mix
Grated cheese
Spring onions
Fresh coriander
THE SPICE CLUB TOPPING (optional)
salt and pepper to taste
preparation
STEP 1: Preheat the oven:
Preheat the oven to 200°C.
Cut the sweet potatoes into fries.
Place them on a baking tray, drizzle with olive oil and sprinkle with THE SPICE CLUB Potato spice mix.
Roast in the oven for about 25-30 minutes, or until crispy.
STEP 2: Fry the chorizo and chicken fillet:
Fry the chorizo and chicken fillet in a frying pan over medium heat until golden brown and done.
Then add the black beans and red pepper and fry for another 2-3 minutes.
STEP 3: Make the creamy sauce:
Mix Greek yogurt with sriracha and a teaspoon of THE SPICE CLUB Potato spice mix.
STEP 4: Assemble and serve:
Divide the grated cheese and then the chorizo-chicken mixture over the fries.
Top with a spoonful of sauce, spring onions and some fresh coriander if desired.
The heat from the fries and the chorizo-chicken mixture will melt the cheese.
STEP 5: Serve immediately
garnish with THE SPICE CLUB TOPPING if desired.
