This tasteful vegetable soup from The Spice Club is the perfect way to put a nutritious and warming meal on the table. With a mix of fresh vegetables and the Homestyle Soup Mix from The Spice Club, this soup can be prepared wonderfully and quickly. Serve with a little freshly rayed Parmesan cheese. Ideal for a healthy lunch or a light dinner!

  • 2 eetlepels extra vierge olijfolie
  • 1 ui, fijngehakt
  • 4 stengels bleekselderij, fijngehakt
  • 4 teentjes knoflook, fijngehakt
  • 1 courgette, in blokjes gesneden
  • 150 g verse of diepvries sperziebonen
  • 4 eetlepels The Spice Club Homestyle Soup Mix
  • 1 blokje groentebouillon
  • 800 g blik tomatenblokjes, geplet
  • Versgeraspte Parmezaanse kaas (optioneel)

preparation

  1. Verhit de olijfolie in een grote soeppan op middelhoog vuur. Voeg de ui en bleekselderij toe en bak ze 5-7 minuten, of totdat ze zacht en glazig zijn.
  2. Voeg de knoflook toe en bak nog 1 minuut, totdat de knoflook geurig is.
  3. Voeg de courgette, sperziebonen, The Spice Club Homestyle Soup Mix en het groentebouillonblokje toe. Roer alles goed door.
  4. Giet de geplette tomaten in de pan en voeg ongeveer 1 liter water toe. Breng het geheel aan de kook, zet het vuur lager en laat de soep 20-25 minuten zachtjes pruttelen, totdat de groenten gaar zijn.
  5. Proef de soep en voeg indien nodig extra zout of peper toe.
  6. Serveer warm en garneer eventueel met versgeraspte Parmezaanse kaas voor een extra rijke smaak.
