- 4 (whole wheat) Tortillas or Tostada Shells
- 3 Tomatoes
- 2 Avocados
- 2 Onions
- 2 Limes
- 400 gr Chicken
- 75 g (skimmed) Cheese
- 200 ml (skimmed) Greek Yogurt
- 1 Bunch of Coriander

preparation
Step 1: Prepare the Tostadas
- Preheat the oven to 200 degrees Celsius and line a large baking tin with baking paper.
- Place the tortillas in a single layer on the baking pan. If necessary, drizzle them with a little olive oil.
- Fry for 5 minutes on each side, turning once, until crispy and golden brown.
Step 2: Prepare the Spicy Chicken
- Cut the chicken fillets into small pieces and place them in a bowl.
- Squeeze the juice of 1 lemon over the bowl and add 4 tablespoons of THE SPICE CLUB MEXICAN spice mix.
- Mix the chicken well so that all pieces are evenly coated with the spices.
- Cook the seasoned chicken in a pan over medium heat for about 5-8 minutes, or until the inside is white and cooked through.
Step 3: Prepare the Toppings
- Make the salsa by cutting the tomatoes, avocado, finely chopped red onion and fresh coriander into small pieces. Add a dash of lime juice and mix everything well.
- For the Greek yogurt sauce, combine 200 ml low-fat Greek yogurt with 1 tablespoon of THE SPICE CLUB MEXICAN spice mix in a bowl.
- Mix well into a tasty sauce.
Step 4: Assemble the Tostadas
- Top each tortilla with a layer of guacamole salsa, followed by the spicy chicken and some grated cheese.
- Garnish with the Greek yogurt sauce and add THE SPICE CLUB TOPPING for extra flavor and crunch, if desired.
