This delicious red lentil Dahl is a simple and nutritious dish, perfect for both starting and experienced chefs. It is full of taste thanks to the addition of The Spice Club Curry. Red lentils are cooked in a creamy coconut sauce and get a surprising twist with baby spinach and poached eggs. This dish is not only tasteful, but also healthy and filling.

Step 1: Preparation of the onion and garlic

  • Pel en snipper de ui.
  • Pel en hak de knoflookteentjes fijn.

Step 2: Baking onion and garlic

  • Verhit een grote pan op middelhoog vuur en voeg de gesnipperde ui toe.
  • Bak de ui gedurende enkele minuten tot deze zacht en glazig is.
  • Voeg de fijngehakte knoflook toe aan de pan en bak nog 2 minuten.

Step 3: Rinse of red lentils

  • Spoel de rode linzen af onder koud water totdat het water helder is.
  • Voeg de gespoelde linzen toe aan de pan.

Step 4: Add tomato puree and herbs

  • Roer de tomatenpuree en The Spice Club Curry door de linzen en uien.
  • Kook dit mengsel gedurende ongeveer 1 minuut terwijl je constant roert om aanbranden te voorkomen.

Step 5: Add coconut milk and simmer

  • Giet de lichte kokosmelk in de pan en breng het mengsel aan de kook.
  • Zodra het kookt, verlaag je het vuur en laat je het ongeveer 20 minuten sudderen.

Step 6: Add baby spinach

  • Was de babyspinazie en hak deze grof.
  • Roer de gehakte spinazie door de pan en kook nog 2 minuten totdat de spinazie geslonken is.

Step 7: Poached eggs

  • Maak vier kleine kuiltjes in de dahl en breek in elk kuiltje een ei.
  • Dek de pan af en laat het nog 5-7 minuten verder koken, tot de eieren gaar zijn.

Step 8: Serve and garnish

  • Serveer de rode linzen dahl gegarneerd met verse koriander.
  • Voor extra smaak en textuur kun je The Spice Club Poke of The Spice Club Topping toevoegen (optioneel).
