This tasty couscous with grilled vegetables, lemon stuffed olives and white cheese is a perfect balance of flavors and textures. Easy to prepare with frozen vegetables and The Spice Club Maroc spice mix for a quick and delicious meal.

300 g couscous
4 tbsp mild olive oil
750 g grilled vegetables (frozen)
4 tsp The Spice Club Maroc spice mix
200 g green olives stuffed with lemon
200 g white cheese (feta)
the spice club topping (for garnish)
preparation
Step 1: Prepare the Couscous
Bring 300 ml of water to the boil.
Place the couscous in a large bowl.
Pour the boiling water over the couscous and cover the bowl with a lid or a plate.
Let the couscous stand for 5-10 minutes until all the water has been absorbed.
Fluff the couscous with a fork.
Step 2: Prepare the Grilled Vegetables
Heat 2 tbsp olive oil in a large frying pan over medium heat.
Add the frozen grilled vegetables to the pan and stir-fry for 8-10 minutes until completely thawed and heated through.
Add 4 tsp The Spice Club Maroc spice mix to the vegetables and stir well.
Step 3: Combine the Ingredients
Cut the green olives filled with lemon into slices.
Crumble the white cheese (feta) into small pieces.
Add the grilled vegetables to the bowl with couscous.
Add the sliced olives and the crumbled white cheese.
Add the remaining 2 tbsp olive oil and mix everything well.
Step 4: Season and Serve
Season the dish with salt and pepper to taste.
Mix everything together well again.
Serve the couscous in large bowls or on a platter and garnish with the spice club topping
