Enjoy a refreshing couscous salad with Moroccan herbs, feta, vegetables and a tasteful dressing. A delicious dish for every occasion!

  • 60 ml extra vierge olijfolie
  • 60 ml rode wijnazijn
  • 4 tl the spice club Maroc kruidenmix
  • 1 theelepel citroenrasp (van 1 citroen)
  • 1 eetlepel citroensap
  • 3 teentjes knoflook, fijngehakt
  • Zout en peper naar smaak
  • 450 gram gekookte parelcouscous, afgekoeld
  • 120 gram verkruimelde feta
  • 120 ml gemengde Griekse olijven, ontpit en gehalveerd
  • 1 komkommer, in stukjes gesneden
  • 150 gram cherrytomaten, gehalveerd
  • 1 kleine rode ui, dun gesneden
  • 4 tl the spice club peterselie of munt (optioneel)

preparation

  1. Kook de parel couscous volgens aanwijzing op de verpakking
  2. Meng in een grote kom de olijfolie, rode wijnazijn, Maroc kruidenmix, citroenrasp, citroensap, knoflook, zout en peper.
  3. Voeg de parelcouscous, feta, olijven, komkommer, cherrytomaten, peperoncini (indien gebruikt) en rode ui toe aan de kom.
  4. Hussel alles voorzichtig door elkaar tot de ingrediënten gelijkmatig zijn verdeeld en de dressing goed is gemengd.
  5. Garneer indien gewenst met peterselie of munt
  6. Serveer de couscous salade direct of bewaar deze in de koelkast tot het serveren.
