Roasted tomato & pepper soup


Try this delicious roasted pepper and tomato soup with butter beans. Simple and tasty recipe with The Spice Club herbs. Perfect for a healthy and easy weeknight meal.

Step 1: Preparing the Vegetables

  • Preheat the oven to 200 degrees Celsius.
  • Halve the tomatoes and cut the pepper into pieces.
  • Remove the top of the garlic bulb.

Step 2: Roasting the Vegetables

  • Place the halved tomatoes, pepper pieces and garlic bulb in an oven dish.
  • Drizzle the vegetables generously with olive oil and sprinkle with The Spice Club Italian spice mix.
  • Roast the vegetables in the preheated oven for 30 minutes.

Step 3: Preparation of the Soup

  • Place the roasted vegetables in a blender (make sure the blender is heat resistant).
  • Blend the vegetables into a smooth soup.

Step 4: Preparing the Soup

  • Heat olive oil in a large pan.
  • Fry the chopped onion in the hot oil for 2 minutes.
  • Add the pureed soup to the pan.

Step 5: Add Butter Beans

  • Add the can of butter beans to the soup.
  • Heat the soup for another 5 minutes.

Step 6: Serve

  • If desired, garnish the soup with extra Italian herbs, a dash of cooking cream and fresh basil.
  • Serve the soup with whole wheat bread of your choice.
