Try this delicious roasted pepper and tomato soup with butter beans. Simple and tasty recipe with The Spice Club herbs. Perfect for a healthy and easy weeknight meal.

- 2 red peppers
- 4 large tomatoes
- 1 whole bulb of garlic
- Olive oil
- 4 tspThe Spice Club Italian·PURCHASE🛍️
- 1 onion
- 1 can of butter beans
- Fresh basil or The Spice Club basil ·PURCHASE🛍️
- Optional: cooking cream
- Whole wheat bread of your choice
preparation
Step 1: Preparing the Vegetables
- Preheat the oven to 200 degrees Celsius.
- Halve the tomatoes and cut the pepper into pieces.
- Remove the top of the garlic bulb.
Step 2: Roasting the Vegetables
- Place the halved tomatoes, pepper pieces and garlic bulb in an oven dish.
- Drizzle the vegetables generously with olive oil and sprinkle with The Spice Club Italian spice mix.
- Roast the vegetables in the preheated oven for 30 minutes.
Step 3: Preparation of the Soup
- Place the roasted vegetables in a blender (make sure the blender is heat resistant).
- Blend the vegetables into a smooth soup.
Step 4: Preparing the Soup
- Heat olive oil in a large pan.
- Fry the chopped onion in the hot oil for 2 minutes.
- Add the pureed soup to the pan.
Step 5: Add Butter Beans
- Add the can of butter beans to the soup.
- Heat the soup for another 5 minutes.
Step 6: Serve
- If desired, garnish the soup with extra Italian herbs, a dash of cooking cream and fresh basil.
- Serve the soup with whole wheat bread of your choice.
