Healthy Green Goddess Vegetable Soup


Try this delicious vegan vegetable soup with a touch of The Spice Club Green Goddess. Easy to make and packed with flavor!


4 persons

  • 2 tablespoons of olive oil
  • 1 onion
  • 2 cloves of garlic
  • 2 stalks of celery
  • 1 zucchini
  • 1 red pepper
  • 500 ml - 1 liter of water
  • 2 tablespoons The Spice Club Green Goddess
  • 100 g fresh spinach
  • 1 avocado
  • 100-200g Crumbled feta (optional, for garnish)
  • THE SPICE CLUB TOPPING (optional, for garnish)


STEP 1: Onion and Garlic Fruity

  • Heat 2 tablespoons olive oil in a large stockpot over medium heat.
  • Add the finely chopped onion and minced garlic to the pan. Sauté until soft and translucent, about 5 minutes.

STEP 2: Add vegetables

  • In the meantime, chop the celery, zucchini and red pepper and add to the pan.
  • Sauté the vegetables until they begin to soften, about 5-7 minutes.

STEP 3: Creating Soup Base

  • Add 500 ml - 1 liter of water (depending on how thick you want the soup) and 2 tablespoons of The Spice Club Green Goddess stock to the pan.
  • Bring the soup to a boil, then reduce the heat and simmer for 20 minutes, or until the vegetables are tender.

STEP 4: Add spinach and avocado

  • Add the fresh spinach to the soup. Cook for a few more minutes, until the spinach has wilted.
  • Add the diced avocado to the soup.

STEP 5: Puree and Garnish

  • Use a hand blender or blender to puree the soup until smooth.
  • Garnish each serving with crumbled feta (optional) and THE SPICE CLUB TOPPING for extra flavor and crunch
