Try this delicious vegan vegetable soup with a touch of The Spice Club Green Goddess. Easy to make and packed with flavor!
ingredients
4 persons
- 2 tablespoons of olive oil
- 1 onion
- 2 cloves of garlic
- 2 stalks of celery
- 1 zucchini
- 1 red pepper
- 500 ml - 1 liter of water
- 2 tablespoons The Spice Club Green Goddess
- 100 g fresh spinach
- 1 avocado
- 100-200g Crumbled feta (optional, for garnish)
- THE SPICE CLUB TOPPING (optional, for garnish)
preparation
STEP 1: Onion and Garlic Fruity
- Heat 2 tablespoons olive oil in a large stockpot over medium heat.
- Add the finely chopped onion and minced garlic to the pan. Sauté until soft and translucent, about 5 minutes.
STEP 2: Add vegetables
- In the meantime, chop the celery, zucchini and red pepper and add to the pan.
- Sauté the vegetables until they begin to soften, about 5-7 minutes.
STEP 3: Creating Soup Base
- Add 500 ml - 1 liter of water (depending on how thick you want the soup) and 2 tablespoons of The Spice Club Green Goddess stock to the pan.
- Bring the soup to a boil, then reduce the heat and simmer for 20 minutes, or until the vegetables are tender.
STEP 4: Add spinach and avocado
- Add the fresh spinach to the soup. Cook for a few more minutes, until the spinach has wilted.
- Add the diced avocado to the soup.
STEP 5: Puree and Garnish
- Use a hand blender or blender to puree the soup until smooth.
- Garnish each serving with crumbled feta (optional) and THE SPICE CLUB TOPPING for extra flavor and crunch
