Green Goddess Sandwich

Enjoy a delicious Green Goddess Cheese Sandwich, packed with flavor and healthy ingredients such as avocado, baby spinach and thinly shaved asparagus. Perfect for a nutritious lunch or a quick meal!

For the Sandwich:
- 8 slices of thick-cut brown or white bread
- 4 tablespoons butter (salted or unsalted, your choice)
- 4 tablespoons mayonnaise
- 340-450 grams mozzarella cheese, grated or thinly sliced
- 1 ripe avocado, sliced
- 1 bag of baby spinach leaves
- 4 asparagus, thinly sliced
Green Goddess Spread:
- 4 teaspoons The Spice Club Green Goddess spice mix
- 1 clove garlic, minced
- 3 tablespoons mayonnaise
- 1/2 cup baby spinach leaves, chopped
preparation
Step 1: Preparing the Green Goddess Spread
- Mix the The Spice Club Green Goddess spice mix, finely chopped garlic, mayonnaise and finely chopped baby spinach leaves in a bowl.
- Stir well until you have a smooth spread.
Step 2: Preparing the Sandwich
- Spread a thin layer of butter on one side of each slice of bread.
- Spread a layer of Green Goddess spread on the unbuttered side of four slices of bread.
- Top these slices of bread with slices of mozzarella cheese, avocado, baby spinach leaves and thinly shaved asparagus.
- Cover with the remaining bread slices, buttered side up.
Step 3: Baking the Sandwich
- Heat a large frying pan over medium heat.
- Place the sandwiches in the pan and fry for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
- Press the sandwiches lightly during baking for even discoloration and melting.
Step 4: Serve
- Cut the sandwiches in half and serve warm.
