Recipe

Enjoy a delicious Green Goddess Cheese Sandwich, packed with flavor and healthy ingredients such as avocado, baby spinach and thinly shaved asparagus. Perfect for a nutritious lunch or a quick meal!

ingredients

4 persons

For the Sandwich:

  • 8 slices of thick-cut brown or white bread
  • 4 tablespoons butter (salted or unsalted, your choice)
  • 4 tablespoons mayonnaise
  • 340-450 grams mozzarella cheese, grated or thinly sliced
  • 1 ripe avocado, sliced
  • 1 bag of baby spinach leaves
  • 4 asparagus, thinly sliced

Green Goddess Spread:

  • 4 teaspoons The Spice Club Green Goddess spice mix
  • 1 clove garlic, minced
  • 3 tablespoons mayonnaise
  • 1/2 cup baby spinach leaves, chopped

preparation

Step 1: Preparing the Green Goddess Spread

  • Mix the The Spice Club Green Goddess spice mix, finely chopped garlic, mayonnaise and finely chopped baby spinach leaves in a bowl.
  • Stir well until you have a smooth spread.

Step 2: Preparing the Sandwich

  • Spread a thin layer of butter on one side of each slice of bread.
  • Spread a layer of Green Goddess spread on the unbuttered side of four slices of bread.
  • Top these slices of bread with slices of mozzarella cheese, avocado, baby spinach leaves and thinly shaved asparagus.
  • Cover with the remaining bread slices, buttered side up.

Step 3: Baking the Sandwich

  • Heat a large frying pan over medium heat.
  • Place the sandwiches in the pan and fry for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
  • Press the sandwiches lightly during baking for even discoloration and melting.

Step 4: Serve

  • Cut the sandwiches in half and serve warm.
