Green Shakshuka with Avocado

Taste the freshness of our Green Shakshuka with Avocado, a unique twist on the classic dish. Prepared with our special spice blend, this recipe combines the rich flavors of green vegetables with the creaminess of avocado. Ideal for a healthy, nutritious meal that is both delicious and easy to make!

ingredients

4 persons

  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons of olive oil
  • 100 grams of fresh spinach
  • 100 grams of kale, without stems
  • 300 ml vegetable stock
  • 2 tablespoons THE SPICE CLUB SHAKSHUKA spice mix
  • 4 eggs
  • (Feta) cheese to taste (optional)
  • 1 avocado, sliced
  • Fresh coriander or parsley, for garnish
  • THE SPICE CLUB TOPPING, for extra flavor
  • Salt and pepper to taste
  • Crispy bread, pita or salad (optional, for serving)

Step 1: Prepare the Onions and Garlic

  • Finely chop the onion and garlic.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add the chopped onion and fry for about 5 minutes until it starts to soften.

Step 2: Add Garlic and Vegetables

  • Add the chopped garlic and cook for another 1-2 minutes until fragrant.
  • Stir in the spinach and kale and cook for about 3-4 minutes until the vegetables are wilted.

Step 3: Make the Sauce

  • Add 300 ml vegetable stock and 2 tablespoons of THE SPICE CLUB SHAKSHUKA spice mix to the pan.
  • Simmer for 10 minutes, stirring occasionally, until the stock has thickened slightly.

Step 4: Add Eggs

  • Make four small wells in the vegetable mixture and carefully crack an egg into each well.
  • Add (feta) cheese to taste if desired.
  • Cover the pan and cook over low heat for about 5-8 minutes, or until the whites are cooked but the yolks are still slightly runny.

Step 5: Serve and Garnish

  • Garnish the shakshuka with avocado slices and fresh coriander or parsley.
  • Sprinkle some THE SPICE CLUB TOPPING over the top for extra flavor.
  • If desired, serve with crusty bread, pita or a side dish of salad to create a balanced meal.
