Try this delicious tuna sandwich with a spicy twist! Tuna mixed with jalapeños, red onion and The Spice Club Fish seasoning, served with tomato, avocado and a touch of hot sauce, all seasoned with low-fat pesto on sourdough bread.
ingredients
4 persons
2 cans of tuna in water, drained
1/2 red onion
2 jalapeños
1/2 cup light mayonnaise
1 tablespoon mustard
1 tablespoon lemon juice
2 tomatoes
1 avocado
2 tablespoons pesto
8 slices of (sourdough) bread
Hot sauce (to taste)
Chopped fresh coriander (optional, for garnish)

STEP 1: Prepare the Tuna Mixture
Drain the canned tuna and place it in a large bowl. Add the chopped red onion, jalapeños, light mayonnaise, mustard, lemon juice and 1 tablespoon of The Spice Club Fish seasoning. Mix well until everything is well combined.
STEP 2: Cut the Tomatoes and Avocado
Cut the tomatoes and avocado into thin slices.
STEP 3: Prepare the Sandwiches
Optional: Toast the bread slices
Spread a layer of pesto on one side of each slice of sourdough bread.
Place an even layer of the tuna mixture on four slices, followed by the tomato and avocado slices.
Drizzle with hot sauce to taste and sprinkle with chopped fresh cilantro.
Top with the remaining slices of sourdough bread, pesto side down, and place on the covered bread slices.
STEP 4: Cut and Serve
Cut each sandwich in half and serve.
