This chicken curry with pumpkin is a delicious, warming meal that is perfect for autumn and winter. The creamy coconut milk and the tasteful chicken curry mix of The Spice Club provide a rich and aromatic sauce, while the pumpkin and baby spinach add extra nutritional and texture. This curry is quick and easy to prepare and can be served with rice for a complete meal. Perfect for a busy weekday evening!

  • 400 ml kokosmelk
  • 4 eetlepels The Spice Club Chicken Curry Mix
  • 1 eetlepel vissaus
  • 1 eetlepel sojasaus
  • 1 eetlepel bruine suiker (optioneel)
  • 400 g pompoenblokjes (of zoete aardappelblokjes
  • 600 g kipfilet, zonder vel en bot
  • 1 rode paprika, in stukjes
  • 100 g (baby)spinazie
  • 1 eetlepel vers limoensap (van 1 limoen)
  • 300 g rijst
  • Fijngehakte verse koriander, voor garnering

preparation

  1. Kook de rijst volgens de aanwijzingen op de verpakking en zet apart.
  2. Verhit een grote pan op middelhoog vuur en voeg de kokosmelk toe. Breng zachtjes aan de kook.
  3. Roer de The Spice Club Chicken Curry Mix, vissaus, sojasaus en de lichte basterdsuiker (indien gebruikt) door de kokosmelk. Laat het mengsel 2-3 minuten zachtjes koken zodat de smaken goed kunnen mengen.
  4. Voeg de pompoenblokjes en de gesneden kipfilet toe aan de pan. Laat het geheel 15-20 minuten sudderen, of totdat de kip gaar is en de pompoen zacht begint te worden.
  5. Voeg de rode paprika toe en laat nog 5 minuten koken, totdat de paprika zacht is.
  6. Roer de spinazie en het limoensap door de kerrie en kook nog een minuut totdat de spinazie is geslonken.
  7. Serveer de kerrie met de gekookte rijst en garneer met verse koriander en een partje limoen.
