The Spice Club Chicken Parmesan

Recipe

This healthy and quick Chicken Parmesan is a tasty, protein-packed meal that's perfect for easy weeknight dinners.

  • 200 gr (WHOLE WHEAT) PASTA
  • 300 gr CHICKEN FILLET
  • 1 EGG
  • 70 g BREAD CRUMBS (PANKO) or (whole wheat) cornflakes
  • 1 CAN OF TOMATOES (400 gr)
  • 60 gr PARMIGIANO REGGIANO CHEESE
  • 150g MOZZARELLA
  • 4 tspTHE SPICE CLUB ITALIAN

Step 1: Preheat Oven and Cook Pasta

  • Preheat the oven to 200°C. Bring a large pot of water to the boil, add a pinch of salt and cook the whole wheat pasta according to the instructions on the package.
  • Once the pasta is cooked, drain it and set it aside.
  • In a shallow bowl, mix the whole wheat breadcrumbs, grated Parmesan cheese and 2 tablespoons of THE SPICE CLUB ITALIAN spice mix. Add a little salt and pepper to taste.

Step 2: Prepare chicken fillets

  • Take another bowl and beat the egg in it. Dip each chicken breast in the beaten egg and then coat in the breadcrumb mixture.
  • Press the breadcrumbs firmly so that it sticks well to the chicken.

Step 3: Bake Chicken

  • Place the breaded chicken fillets on a baking tray lined with baking paper. If you want the chicken to be extra crispy, you can lightly spray it with olive oil spray.
  • Bake the chicken in the preheated oven for about 20 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown and crispy.

Step 4: Adding Tomato Sauce and Mozzarella

  • Remove the chicken from the oven and spoon the canned tomatoes over each piece of chicken. Then top each chicken breast with a generous amount of grated mozzarella.
  • Return the chicken to the oven and bake for another 5-7 minutes, or until the cheese is completely melted and bubbly.
  • Serve the breaded chicken fillet with tomato sauce and mozzarella on top of a bed of whole wheat pasta.
