Refresh your meal with this Cucumber Salad with Yogurt Dressing, filled with chickpeas, red onion, parsley, mint and dill, all wrapped in a delicious yogurt-lemon dressing.

Yogurt Dressing:

  • 60 ml Greek yogurt
  • 60 ml extra virgin olive oil
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • 2 cloves garlic, minced
  • 2 teaspoons chopped fresh mint
  • 4 teaspoons The Spice Club Green Goddess spice mix
  • Salt and pepper to taste

Salad:

  • 1 large English cucumber, thinly sliced
  • 1 can chickpeas (400 g), drained and rinsed
  • ¼ red onion, thinly sliced
  • ¼ cup chopped flat-leaf parsley
  • ¼ cup chopped fresh mint leaves
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)

preparation

Step 1: Make the Yogurt Dressing

  • In a medium bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, chopped mint and The Spice Club Green Goddess spice mix.
  • Beat well until a smooth dressing is formed.
  • Season with salt and pepper to taste.

Step 2: Prepare the Salad

  • Cut the cucumber into thin slices and place them in a large bowl.
  • Add the drained chickpeas, thinly sliced ​​red onion, chopped parsley, chopped mint leaves and chopped dill to the bowl.

Step 3: Mix the Salad

  • Pour the yogurt dressing over the cucumber salad.
  • Gently mix everything together so that all ingredients are well covered with the dressing.

Step 4: Serve the Salad

  • Serve immediately as a side dish with The Spice Club Topping as a finishing touch or place in the refrigerator to cool until you are ready to serve.
