1-Pan Mediterranean Chicken from the Oven

Try this flavorful One-Pan Oven Moroccan Chicken, an easy dish for beginners. Juicy chicken with delicious herbs and vegetables. Ideal for a quick & easy weeknight meal.

  • 8 chicken drumsticks
  • 4 cloves of garlic
  • 1 lemon
  • 2 peppers (red or yellow)
  • 3 tablespoons of olive oil
  • 2 tablespoons Greek yogurt
  • 2 teaspoons THE SPICE CLUB MAROC spice mix
  • 400 g baby gold potatoes
  • Handful of black or green olives
  • Sliced ​​spring onions
  • THE SPICE CLUB TOPPING (optional for garnish)

STEP 1: Prepare Garlic and Lemon and Heat Over

  • Preheat the oven to 200°C so it is ready for baking.
  • Start by chopping 4 cloves of garlic and cutting 1 lemon into small pieces.

STEP 2: Make marinade

  • In a bowl, mix 3 tablespoons of olive oil, 2 tablespoons of yogurt, the chopped garlic and 2 teaspoons of THE SPICE CLUB MAROC spice mix. Stir well until everything is well mixed.

STEP 3: Marinate Chicken

  • Add 8 chicken drumsticks to the marinade. Make sure each piece is well covered. Let it marinate for at least 15 minutes for extra flavor.

STEP 4: Preparing potatoes

  • Cut 400 g baby gold potatoes in half.
  • Cut the peppers into pieces

STEP 5: Prepare the oven dish

  • Place the marinated chicken drumsticks, sliced ​​potatoes, pieces of pepper, lemon slices and a handful of black or green olives in an oven dish.
  • Sprinkle the lemon juice over the chicken and vegetables for extra flavor.

STEP 6: Bake in the Oven

  • Bake in the preheated oven for 25-30 minutes. This ensures that the chicken is cooked and juicy and the vegetables are nice and crispy.
