1-Pan Chicken with Fresh Yogurt Sauce


Discover this tasty recipe for spicy vegetable rice with tender chicken and a delicious Greek yogurt sauce, perfect for a healthy and easy weeknight meal.

  • 200g brown rice
  • 400g chicken fillet
  • 1 zucchini
  • 1 red onion
  • 200g chickpeas
  • 2 cloves of garlic
  • 1 Can of tomato paste
  • 1 red pepper (optional)
  • 2 tablespoons sun-dried tomato tapenade
  • 2 teaspoons THE SPICE CLUB MAROC spice mix
  • 150g Greek yogurt
  • 1 lemon
  • 200g feta
  • THE SPICE CLUB TOPPING (Optional for garnish)


STEP 1: Cook rice and marinate chicken

  • Cut the chicken into pieces and place in a bowl. Add a dash of olive oil, 2 teaspoons of The Spice Club Maroc and mix well. Let it marinate for a while
  • Start by cooking 200 grams of brown rice according to the instructions on the package. Drain and set aside.

STEP 2: Bake Chicken

  • Heat a large pan over medium heat and add a dash of olive oil.
  • Fry the chicken in the pan until golden brown and done. Remove the fried chicken from the pan and set aside.

STEP 3: Fry vegetables

  • In the same pan, add the thin slices of zucchini, thin rings of red onion and finely chopped garlic.
  • Fry the vegetables for 4-5 minutes until they soften and give off a delicious aroma.

STEP 4: Add sauce

  • Add 2 tablespoons tomato puree, finely chopped red pepper, 2 tablespoons sun-dried tomato tapenade and 2 teaspoons THE SPICE CLUB MAROC spice mix to the pan.
  • Stir everything well and let it cook for a minute so that the herbs can release their aroma.

STEP 5: Add Rice and Chickpeas

  • Add the cooked rice and the drained chickpeas (200 grams) to the pan.
  • Mix everything together well so that the flavors blend.
  • Add a dash of water if necessary. Let everything simmer for a few minutes.

STEP 6: Make Yogurt Sauce

  • In a small bowl, mix 150 grams of Greek yogurt, finely chopped garlic, 1 teaspoon of THE SPICE CLUB GREEN GODDESS spice mix, juice and zest of 1 lemon.
  • Stir everything together well for a refreshing yogurt sauce.

STEP 7: Serve

  • Spoon the spicy vegetable rice onto plates and place the fried chicken fillet on top.
  • Add a scoop of the spicy yogurt sauce for extra flavor.
  • Sprinkle 50 grams of crumbled feta over each portion. Garnish with THE SPICE CLUB TOPPING to complete the dish.
