Enjoy a tasty vegetarian sweet potato curry with a hint of THE SPICE CLUB THAI spice mix. This delicious curry is packed with flavor and healthy ingredients such as sweet potatoes, chickpeas, kale and coconut milk. The addition of ginger, garlic and spices gives this curry a delicious taste.
ingredients

2 large sweet potatoes
1 tablespoon of olive oil
1 onion
2 cloves of garlic
1 piece of ginger
2 tablespoonsTHE SPICE CLUB THAIspice mix
1 can of chickpeas (400 grams)
200 grams of kale
1 can of coconut milk (400 ml)
2 tablespoons tamari or soy sauce
1 tablespoon maple syrup or honey
Fresh basil and/or coriander for garnish

Step 1: Preparation
Start by washing and peeling the sweet potatoes. Cut them into 1 cm thick slices and then cut each slice into quarters. Set aside.
Step 2: Fry onion
In a large pan, heat the olive oil over medium heat. Chop the onion and add it to the pan. Cook for 3-4 minutes.
Step 3: Add Garlic, Ginger and Spices
Finely chop the garlic and ginger. Add them to the pan and cook for another 1-2 minutes, until fragrant. StirTHE SPICE CLUB THAIstir in and cook for another 1 minute, until the spices are fragrant.
Step 4: Add Sweet Potatoes, Chickpeas, Kale and Coconut Milk
Add the sliced sweet potatoes, chickpeas, kale and coconut milk to the pan. Stir well. Bring the mixture to a gentle boil, cover and simmer for 15-20 minutes.
Step 5: Season and Serve
