Enjoy a tasteful vegetarian sweet potato curry with a touch of The Spice Club Thai herbal mix. This delicious curry is packed with taste and healthy ingredients such as sweet potatoes, chickpeas, kale and coconut milk. The addition of ginger, garlic and spices gives this curry a delicious taste.

Step 1: Preparation

  • Begin met het wassen en schillen van de zoete aardappelen.
  • Snijd ze in plakjes van 1 cm dik en snijd elke plak vervolgens in kwarten. Zet apart.

Step 2: Baking onion

  • Verhit in een grote pan de olijfolie op middelhoog vuur.
  • Snipper de ui en voeg deze toe aan de pan. Bak gedurende 3-4 minuten.

Step 3: Add garlic, ginger and spices

  • Hak de knoflook en gember fijn. Voeg ze toe aan de pan en bak nog 1-2 minuten, tot ze geurig zijn.
  • Roer THE SPICE CLUB THAI erdoor en bak nog 1 minuut, tot de specerijen geurig zijn.

Step 4: Add sweet potatoes, chickpeas, kale and coconut milk

  • Voeg de gesneden zoete aardappelen, kikkererwten, boerenkool en kokosmelk toe aan de pan. Roer goed door elkaar.
  • Breng het mengsel zachtjes aan de kook, dek af en laat 15-20 minuten sudderen.

Step 5: Season and serve

  • Roer de tamari of sojasaus en maple syrup of honing erdoor.
  • Serveer de curry en garneer met verse basilicum en/of verse koriander en een vleugje THE SPICE CLUB POKE of THE SPICE CLUB COCO & HAZEL.
  • Geniet van deze heerlijke en gezonde zoete aardappel curry!
