This is the ideal choice for a weekend brunch, a quick weeknight meal or a filling lunch. Easy to prepare and full of rich flavors, this spicy chorizo shakshuka is sure to become a favorite in your kitchen.
ingredients
4 persons
- 1 tablespoon of olive oil
- 1 onion, finely chopped
- 1 red pepper, finely chopped
- 100 grams of chorizo, cut into small pieces
- 2 cloves garlic, minced
- 2 tablespoons THE SPICE CLUB SHAKSHUKA spice mixture
- 1 can (400 grams) crushed tomatoes
- Salt and pepper to taste
- 4 eggs
- Optional: grated cheese of your choice
- Fresh coriander or parsley, for garnish
- THE SPICE CLUB TOPPING
- Crispy bread, pita or a side salad (optional, for serving)
preparation
STEP 1: Prepare the Vegetables and Chorizo
- Chop the onion, garlic, chorizo and pepper into small pieces.
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion, pepper and chorizo and fry for about 5-7 minutes, until the vegetables start to soften and the chorizo is brown.
STEP 2: Add Spices and Fry
- Add the minced garlic and THE SPICE CLUB SHAKSHUKA and fry for another 1-2 minutes, until fragrant.
- Stir in the tomatoes.
- Simmer the sauce for about 15 minutes, stirring occasionally, until it thickens.
STEP 3: Poach the Eggs (and Add Cheese, If Desired)
- Make four small wells in the sauce and carefully break an egg into each well.
- Add cheese if desired.
- Cover the skillet and cook over low heat for about 8-15 minutes, or until the whites are set but the yolks are still slightly runny.
STEP 4: Garnish and Serve
- Garnish the shakshuka with fresh coriander or parsley and THE SPICE CLUB TOPPING.
- If desired, serve with crusty bread, pita or a side salad for a balanced meal.
