This is the ideal choice for a weekend brunch, a quick weeknight meal or a filling lunch. Easy to prepare and full of rich flavors, this spicy chorizo shakshuka is sure to become a favorite in your kitchen.
ingredients
4 persons
1 tablespoon of olive oil
1 onion, finely chopped
1 red pepper, finely chopped
100 grams of chorizo, cut into small pieces
2 cloves garlic, minced
2 tablespoons THE SPICE CLUB SHAKSHUKA spice mixture
1 can (400 grams) crushed tomatoes
Salt and pepper to taste
4 eggs
Optional: grated cheese of your choice
Fresh coriander or parsley, for garnish

Crispy bread, pita or a side salad (optional, for serving)
preparation
STEP 1: Prepare the Vegetables and Chorizo
Chop the onion, garlic, chorizo and pepper into small pieces.
Heat olive oil in a large skillet over medium heat.
Add the chopped onion, pepper and chorizo and fry for about 5-7 minutes, until the vegetables start to soften and the chorizo is brown.
STEP 2: Add Spices and Fry
Add the minced garlic and THE SPICE CLUB SHAKSHUKA and fry for another 1-2 minutes, until fragrant.
Stir in the tomatoes.
Simmer the sauce for about 15 minutes, stirring occasionally, until it thickens.
STEP 3: Poach the Eggs (and Add Cheese, If Desired)
Make four small wells in the sauce and carefully break an egg into each well.
Add cheese if desired.
Cover the skillet and cook over low heat for about 8-15 minutes, or until the whites are set but the yolks are still slightly runny.
STEP 4: Garnish and Serve
Garnish the shakshuka with fresh coriander or parsley and THE SPICE CLUB TOPPING.
If desired, serve with crusty bread, pita or a side salad for a balanced meal.
