Try this tasteful recipe for The Spice Club Overnight Oats, a nutritious breakfast full of autumn flavors. With pumpkin puree, almond butter, chia seed and The Spice Club Pumpkin Pie Spice, finished with seasoned pecans and optionally vegetable yogurt. Easy to prepare with European sizes and ideal for a fast, healthy start to the day. Prepare it the night before for an effortless breakfast.

Overnight OATS:

  • 100 ml ongezoete amandelmelk (of een andere plantaardige melk naar keuze)
  • 100 g pompoenpuree
  • 1 eetlepel ongezouten (amandel)boter
  • 1 eetlepel chiazaad
  • 2 eetlepel siroop of honing
  • 2 tl The Spice Club Pumpkin Pie Spice
  • 1 theelepel vanille-extract (optioneel)
  • 40-50 g havervlokken

Topping:

  • 50 g pecannoten, grof gehakt
  • 1 eetlepel stroop of honing
  • 1 theelepel The Spice Club Pumpkin Pie Spice
  • 50 ml (plantaardige) yoghurt, naturel of vanille (optioneel)

Make your own pumpkin puree? Peel the pumpkin, remove the seeds and cut the flesh into equal cubes. Boil the cubes in water for 15-20 minutes until they are soft. Drain, let them evaporate briefly and puree until smooth.

Prepare overnight oats:

  • Meng in een kom of afsluitbare pot de amandelmelk, pompoenpuree, amandelboter, chiazaad, ahornsiroop, The Spice Club Pumpkin Pie Spice en vanille-extract tot een glad mengsel.
  • Voeg de havervlokken toe en roer goed door zodat alle ingrediënten gelijkmatig zijn verdeeld.
  • Dek de kom af of sluit de pot en zet deze minimaal 4 uur, maar bij voorkeur een hele nacht, in de koelkast om de smaken te laten mengen en de havervlokken te laten weken.

TOPPING Preparing:

  • Meng de gehakte pecannoten met de ahornsiroop en The Spice Club Pumpkin Pie Spice in een kleine kom tot de noten gelijkmatig bedekt zijn.

Serve:

  • Haal de overnight oats uit de koelkast en roer even door.
  • Schep de gekruide pecannoten erop en voeg eventueel een lepel plantaardige yoghurt toe voor extra romigheid.
