Snelle garnalen curry met kokosmelk, sjalotten en The Spice Club Chicken Curry mix. Romig, kruidig en in 20 minuten klaar – perfect met basmati of jasmijnrijst

ingredients

4 people

  • 2 el olijfolie of plantaardige olie
  • 2 middelgrote sjalotten, fijngehakt
  • 4 tl The Spice Club (Chicken) Curry mix
  • ½ tl versgemalen zwarte peper
  • 300 ml kokosmelk (ongezoet, uit blik)
  • 700 g grote of middelgrote garnalen, gepeld en schoongemaakt
  • 2 tl citroensap
  • Gestoomde basmati- of jasmijnrijst, voor erbij
  • Verse koriander, ter garnering (optioneel)

Tip: Voor extra groenten kun je spinazie of broccoli toevoegen in de laatste 2 minuten van de kooktijd.

preparation

Stap 1 – Basis maken
Verhit de olie in een grote pan op middelhoog vuur. Voeg de sjalotten toe en bak 3–4 minuten tot ze zacht en licht goudbruin zijn.

Stap 2 – Kruiden toevoegen
Roer de Curry mix en zwarte peper erdoor. Bak 1 minuut tot de specerijen geuren.

Stap 3 – Kokosmelk en garnalen
Voeg de kokosmelk toe en roer goed door. Laat 2 minuten zachtjes pruttelen en voeg daarna de garnalen toe. Kook 3–4 minuten mee, tot de garnalen roze en net gaar zijn.

Stap 4 – Afmaken
Roer het citroensap erdoor.

Stap 5 – Serveren
Serveer de curry met warme rijst en garneer eventueel met verse koriander.
