This traybake is a simple and tasty dish in which the sweet pumpkin, savory goat cheese and crispy walnuts come together perfectly. The addition of The Spice Club Traybake Mix provides an extra taste dimension. Serve immediately and enjoy this delicious meal!

4 people

  • 400 g gnocchi​
  • 800 g pompoenblokjes​
  • 3 rode uien, in partjes gesneden
  • 2 eetlepels olijfolie​
  • 200 g geitenkaas (of feta), in plakjes​
  • 1 eetlepel vloeibare honing​
  • 50 g walnoten (optioneel), grof gehakt​
  • 85 g rucola​
  • 3 eetlepels The Spice Club Traybake Mix​
  • Peper en zout, naar smaak (optioneel)

preparation

Preheat the oven:

  • Verwarm de oven voor op 200 °C.

Preparing ingredients:

  • Meng in een grote kom de gnocchi, pompoenblokjes en rode ui met de olijfolie en The Spice Club Traybake Mix.

Prepare baking tray:

  • Bekleed een bakplaat met bakpapier en verdeel het gnocchi-pompoenmengsel gelijkmatig over de plaat.​

Add goat cheese:

  • Leg de plakjes geitenkaas bovenop het gnocchi-pompoenmengsel en besprenkel de kaas met de vloeibare honing.​

Bake:

  • Bak de traybake gedurende 15 minuten in de voorverwarmde oven.
  • Haal de bakplaat uit de oven, strooi de walnoten erover en bak nog eens 5-10 minuten, of totdat de pompoen zacht is en de gnocchi goudbruin zijn.

Serve:

  • Haal de traybake uit de oven en laat enkele minuten afkoelen.​
  • Verdeel de rucola over de traybake vlak voor het serveren voor een frisse toets
