Delicious Indian tilapia with roasted sweet potato and Brussels sprouts, served with a fresh yoghurt sauce. A nutritious and tasteful meal!

ingredients

4 people

  • 4 Tilapiafilets
  • 4 g zoete aardappel, geschild en in blokjes gesneden
  • 250 g spruitjes, gehalveerd
  • 200 ml Griekse yoghurt (vetvrij)
  • 4 el hartige tomatenchutney of tomatenpuree
  • 4 el gedroogde krenten
  • 2 el appelazijn
  • 4 tl The Spice Club Curry mix
  • Olijfolie, voor bakken

preparation

Preheat the oven and roast sweet potatoes:

  • Verwarm de oven voor op 200°C.
  • Verdeel de zoete aardappelblokjes en spruitjes op een bakplaat, besprenkel met olijfolie peper en 2 tl curry mix. Rooster ze gedurende 20-25 minuten tot ze goudbruin en zacht zijn, halverwege omdraaien.

Prepare tilapia:

  • Verhit een beetje olijfolie in een koekenpan op middelhoog vuur.
  • Wrijf de tilapiafilets in met 2 tl Curry mix.
  • Bak de filets 3-4 minuten per kant, of totdat de vis goudbruin is en uit elkaar begint te vallen.

Make yoghurt sauce:

  • Meng ondertussen de Griekse yoghurt met de tomatenchutney, appelazijn en gedroogde krenten in een kleine kom. Roer goed door.

Serve:

  • Verdeel de geroosterde zoete aardappel en spruitjes over de borden. Leg de tilapiafilets erop en besprenkel met de yoghurtsaus. Garneer eventueel met extra krenten en serveer direct.
