Try this creamy vegan pasta with THE SPICE CLUB Green Goddess for a delicious meal. Easy to make and full of flavor!
ingredients
4 persons
250g pasta of your choice
1 onion (finely chopped)
2 cloves garlic (finely chopped)
2 tablespoons of olive oil
150g fresh spinach
A handful of fresh basil leaves
400g white beans (drained and rinsed)
Juice of 1 lemon
2 tablespoons THE SPICE CLUB Green Goddess spice mix
THE SPICE CLUB TOPPING (optional for garnish)
preparation
STEP 1: Cooking Pasta
Place a large pan of water on the stove and bring to the boil. Add the pasta and cook according to package instructions, but cook 1-2 minutes less than indicated.
Drain and reserve some of the cooking water.
STEP 2: Onion and Garlic Fruity
Heat 2 tablespoons of olive oil in a frying pan over medium heat. Add the finely chopped onion and minced garlic to the pan.
Fry for about 5 minutes until the onion is soft and light golden brown.
STEP 3: Add spinach and basil
Add the fresh spinach and basil leaves to the pan.
Cook for a few more minutes, stirring frequently, until the spinach has wilted.
STEP 4: Make the Sauce
Place the fried mixture of onion, garlic, spinach and basil in a blender.
Add the white beans, juice of 1 lemon, 2 tablespoons THE SPICE CLUB Green Goddess spice mix and half a cup of the reserved pasta water.
Blend everything until you get a smooth sauce.
STEP 5: Mix and Serve
Pour the prepared sauce over the pasta.
Mix well and add some reserved pasta water if necessary to thin the sauce.
STEP 6: Serve and Enjoy
If necessary, warm up a little in the pan.
