15 ml olive oil
3 cloves garlic, minced
680 g tomato passata
4 tsp The Spice Club Italian
2-4 tsp The Spice Club Chili pepper (optional)
Salt and pepper to taste
340 g pasta of your choice
200 g Huttenkase (light)
100g grated Parmesan cheese, plus extra for serving
2 tsp grated lime zest
15 ml fresh lime juice (from 1 lime)
Chopped parsley for garnish (optional)
preparation
Heat the olive oil in a large pan over medium heat. Add the garlic and cook until fragrant.
Add the tomato passata, Italian spice mix & chili pepper. Stir well and let simmer for 5 minutes.
Meanwhile, cook the pasta according to package directions until al dente. Drain and reserve some cooking liquid.
Add the cottage cheese, grated Parmesan cheese, lime zest and lime juice to the sauce. Stir well until the cheese has melted.
Add the cooked pasta to the sauce and mix well. If necessary, add some of the reserved cooking liquid to thin the sauce and season with salt and pepper.
Serve the pasta warm, garnished with additional grated Parmesan cheese and chopped parsley if desired.
