Step 1: Prepare the Tomato Sauce

  • Preheat the oven to 180°C (convection) or 200°C (electric).
  • Place the 2 cans of diced tomatoes in a pan and add 4 tablespoons of THE SPICE CLUB MEXICAN spice mix.
  • Let this simmer over low heat while you prepare the rest of the dish.

Step 2: Prepare the Minced Meat Mixture

  • Finely chop the onion and garlic.
  • Heat a little olive oil in a pan and fry the onion and garlic until soft.
  • Then add the minced meat and fry until done.
  • Cut the pepper into cubes and add it to the minced meat together with the drained corn.
  • Fry for a few more minutes until the pepper softens slightly.
  • Add 1 extra tablespoon of THE SPICE CLUB MEXICAN spice mix at the last minute for extra flavor.

Step 3: Fill and Roll the Enchiladas

  • Spread a thin layer of crème fraîche over each tortilla.
  • Spoon the meat mixture into the center of each tortilla and roll them into enchiladas.
  • Place the rolled tortillas in a greased baking dish.
  • Pour some of the tomato sauce over the enchiladas. Save some sauce for later.
  • Sprinkle the enchiladas generously with grated cheese.

Step 4: Bake the Enchiladas

  • Place the baking dish in the preheated oven and bake the enchiladas for about 25 minutes, or until the cheese is golden brown and bubbly.
  • Remove the enchiladas from the oven and sprinkle with THE SPICE CLUB TOPPING for extra flavor and crunch, if desired.
