- 500 gr Minced meat
- 8 (whole wheat) tortillas
- 1 can (400ml) Diced tomatoes
- 2 cloves Garlic
- 2 peppers
- 1 Onion
- Grated cheese
- 1 can of corn
- 200g Creme Fraiche
- 4 tspThe Spice Club Mexican·PURCHASE🛍️

preparation
Step 1: Prepare the Tomato Sauce
- Preheat the oven to 180°C (convection) or 200°C (electric).
- Place the 2 cans of diced tomatoes in a pan and add 4 tablespoons of THE SPICE CLUB MEXICAN spice mix.
- Let this simmer over low heat while you prepare the rest of the dish.
Step 2: Prepare the Minced Meat Mixture
- Finely chop the onion and garlic.
- Heat a little olive oil in a pan and fry the onion and garlic until soft.
- Then add the minced meat and fry until done.
- Cut the pepper into cubes and add it to the minced meat together with the drained corn.
- Fry for a few more minutes until the pepper softens slightly.
- Add 1 extra tablespoon of THE SPICE CLUB MEXICAN spice mix at the last minute for extra flavor.
Step 3: Fill and Roll the Enchiladas
- Spread a thin layer of crème fraîche over each tortilla.
- Spoon the meat mixture into the center of each tortilla and roll them into enchiladas.
- Place the rolled tortillas in a greased baking dish.
- Pour some of the tomato sauce over the enchiladas. Save some sauce for later.
- Sprinkle the enchiladas generously with grated cheese.
Step 4: Bake the Enchiladas
- Place the baking dish in the preheated oven and bake the enchiladas for about 25 minutes, or until the cheese is golden brown and bubbly.
- Remove the enchiladas from the oven and sprinkle with THE SPICE CLUB TOPPING for extra flavor and crunch, if desired.
