These shrimp fajitas are a delicious mix of juicy shrimp, crispy peppers and onion, perfect for a quick and tasty dinner. Garnish with avocado and coriander!

ingredients

4 people

  • 4 tl The Spice Club Taco & Fajita mix
  • 4 el extra vierge olijfolie
  • 2 el vers limoensap (van 1 limoen)
  • 600 g jumbo garnalen, rauw, gepeld en schoongemaakt
  • 2 paprika's, in repen van 1 cm gesneden
  • 1 ui, in plakken van 1 cm gesneden
  • 4 grote of 8 kleine tortilla's, verwarmd
  • 2 avocados, voor serveren
  • Verse koriander, voor serveren

preparation

Step 1: Marinating shrimp

  • Meng de fajita mix, olijfolie en limoensap in een kom.
  • Voeg de garnalen toe en roer goed zodat ze volledig bedekt zijn. Laat de garnalen 10-15 minuten marineren.

Step 2: Baking vegetables

  • Verhit een grote koekenpan op middelhoog vuur. Voeg de paprika's en ui toe en bak ze 5-7 minuten tot ze zacht beginnen te worden. Haal ze uit de pan en zet apart.

Step 3: Baking shrimp

  • Voeg de gemarineerde garnalen toe aan de pan en bak ze 2-3 minuten per kant tot ze roze en gaar zijn.

Step 4: Combine vegetables and shrimp

  • Voeg de gebakken paprika's en ui weer toe aan de pan met de garnalen en roer alles goed door.

Step 5: Filling tortillas

  • Vul de verwarmde tortilla's met de garnalen en groenten.

Step 6: Serve

  • Serveer de garnalen fajitas met gesneden avocado, verse koriander en optioneel limoenpartjes.
