Roasted carrot soup


Enjoy a tasty carrot and shallot soup with a hint of The Spice Club Green Goddess. Easy to make and packed with flavor!


4 persons

  • 500 g carrots
  • 6 shallots
  • 6 cloves of garlic
  • Olive oil
  • 2-4 tablespoons THE SPICE CLUB GREEN GODDESS
  • Salt and pepper to taste
  • THE SPICE CLUB TOPPING (optional for garnish)


STEP 1: Preparing the Vegetables

  • Preheat the oven to 200 degrees Celsius.
  • Place 500 g carrots, 6 shallots and 6 cloves of garlic on a baking tray. Sprinkle them with olive oil.

STEP 2: Roasting the Vegetables

  • Roast the vegetables in the oven for 30 minutes, or until soft and lightly browned.

STEP 3: Preparing the Soup

  • Remove the roasted vegetables from the oven and let them cool slightly.
  • Squeeze the garlic cloves from the bulb and place them in a large pan together with the roasted carrots and shallots.

STEP 4: Puree the Soup

  • Add 2 - 4 tablespoons of THE SPICE CLUB GREEN GODDESS and 1 liter (boiling) water to the pan.
  • Puree the mixture with a hand blender until it becomes a smooth soup. Add some water if necessary to achieve the desired consistency.

STEP 5: Heat and Season

  • Heat the soup over low heat and season with salt and pepper.

STEP 6: Garnish and Enjoy

  • Serve the soup with a dash of THE SPICE CLUB TOPPING for extra flavor and crunch.
