ingredients

4 sweet potatoes
Olive oil
1 onion
2 cloves of garlic
300 g minced meat of your choice
1 can of chopped tomatoes (400 g)
2 tablespoons THE SPICE CLUB POTATO spice mix
Greek yoghurt
Fresh coriander
THE SPICE CLUB TOPPING (optional)
salt and pepper to taste

STEP 1: Prepare and Bake Sweet Potatoes
Preheat your oven to 200°C.
Halve sweet potatoes and place them on a baking sheet.
Bake them for about 30 minutes.
STEP 2: Prepare the minced meat mixture
Heat olive oil in a large saucepan over medium heat.
Cut 1 onion into cubes and chop 2 cloves of garlic. Add them to the pan and fry until the onion is translucent and the garlic is fragrant.
Add 300 g of minced meat of your choice to the pan. Cook until the minced meat is brown and completely cooked.
Add 1 can of chopped tomatoes (400 g) and 2 tablespoons of THE SPICE CLUB POTATO spice mix to the pan. Stir well and let the mixture simmer for a few minutes to thicken.
STEP 3: Stuffing Sweet Potatoes
When the sweet potatoes are ready, remove them from the oven and let them cool slightly.
Loosen the inside with a fork.
Spoon the ground beef and tomato mixture over each sweet potato.
STEP 4: Garnish and Serve
Garnish with a spoonful of Greek yogurt and fresh coriander.
If necessary, add some THE SPICE CLUB TOPPING for extra flavor.
Season with salt & pepper if necessary
